Cherry Bourbon Smoked Cream Cheese

Cherry Burbon Smoked Cream Cheese

Ingredients

1 8 oz. block cream cheese (full fat)

2 cups of frozen cherries

½ cup Bourbon

2 Tbsp. sugar

Salt to taste

1 tsp. Fresh thyme leaves (plus more for garnish)

Crackers of your choosing


Instructions

Put your cream cheese on a piece of aluminum foil with holes punched in it with a fork, this allows the smoke to reach all sides of the cream cheese, Score cream cheese about ½ inch deep.

Put your cream cheese on the smoker or pellet grill at 200 degrees for at least 1hour. For a deep smoke flavor you can do 2 hours.

While the cream cheese is smoking, put the cherries, bourbon, sugar, salt, and pinch of fresh thyme in a saucepan.

Bring to a boil then reduce heat to medium low and simmer for about 20 minutes, stirring occasionally to break up the cherries. Let cool.

Serve the cream cheese with the bourbon cherries on top and garnish with fresh thyme. Serve with your favorite cracker or chip, either warm or at room temperature.

Note: For a stronger bourbon flavor, stir in a splash of bourbon after cooking the cherries.
